Baking chamber made entirely of refractory, slab of Sorrento Biscuit. Exposed 16mm dome heating elements allow heat distribution by radiation like the traditional wood-fired oven. The oven is equipped with a 7-inch 65k Touch control panel and customizable menu of up to 100 recipes. Separate management of slab and percentage sky.

  • Maximum Power: 15 Kw, with three-phase power supply, which enables rapid heating and effective temperature maintenance.
  • Cooktop: Made of Sorrento Biscuit, often used for its ability to retain heat and ensure even cooking.
  • Height of the Cooking Chamber: 16 cm, which allows even thicker products to be cooked.
  • Heating elements: Armored and exposed, for rapid heat diffusion.
  • Sky and Sides: Made of refractory plates that contribute to even cooking and heat retention.
  • Adjustment: With 1 probe, to monitor and control the temperature inside the oven.
  • Insulating Door: Useful at the end of cooking, to keep heat inside the oven and optimize energy consumption.
  • Support Base: Made of painted steel with self-leveling casters, making it easy to move and install the kiln.

SORRENTO BISCOTTO PLATE: refractory stone made of natural clay with excellent combustion properties typical of the Neapolitan area. Sorrento Biscuit allows a large amount of heat to be stored and distributed evenly, so that the temperature remains constant. Being a material with high porosity, it is subject to greater maintenance.

REFRACTORY PLATE: Special shapes made of pressed refractory clay, characterized by excellent resistance to thermal shock and high load-bearing capacity with excellent yield, homogeneous temperature.
